Sweetsap is a natural sweetener obtained from the unopened flower of the coconut, not the fruit. Sweetsap is produced from the sweet juices of tropical coconut blossoms. Farmers climb high coconut trees to harvest the nectar by gently slicing the flower. Once collected the nectar is boiled into a thick caramel and ground to a fine crystal.
