HOW TO MAKE GALUNGGONG SARDINES?
Ingredients:
1 kilo fresh galunggong (bobburon) heads and tail cut off
¾ cup cooking oil
3-4 pcs ripe chili pepper (colecot)
1 small carrot, sliced
2 ½ tsp. salt
1.8 oz can tomato sauce
½ tsp vetsin
I pcs. Whole pickled (sliced)
2 tbsp. vinegar
1 cup water
4 pcs. Pepper corn
1 laurel leaf
½ tsp. pepper
Procedure:
Arranged cleaned galunngong in a pressure cooker. Pour oil, tomato sauce and water. Season with salt, pepper calamansi juice, vetsin and chilly powder. Add carrots, sweet pickles laurel leaf and pepper corn. Pressure cook for one hour to soften the bones. If pressure cooker is not available, fish maybe simmered in ordinary casserole for 2 hours. Replace water that has evaporated to prevent burning.
