Chayote Mixed Pickles
Ingredients:
1 kilo chayote
3 regular size carrots
3 sweet red pepper
3 sweet green pepper
10 pieces onions
3 pieces hot pepper
2 regular size onions
Procedure:
Wash and cut vegetables into thin strips. Work the vegetables with salt and press to remove part of the juice. Wash the vegetables 2 times and drain in a colander.
Prepare the pickling solution:
1 cup vinegar
1 cup sugar
Place the vinegar and sugar in a sauce pan. Let boil for 5 minutes. Add the drained vegetables. Let it boil for 5 minutes. Pack in sterilized jars. Process. Turn the jars upside down to check for lickage. Refrigerate.
